Photo from Delicious Magazine

So this conversation happened last week when we were eating butter chicken:

Parker: Mommy, wouldn't it be hilarious if we ate a chicken?
Me: Um... we are eating chicken buddy.
Parker (laughing): I know, but I mean if we killed a chicken with a head and feet and feathers and everything and then ate it.
Me (looking at Tyler for guidance and thinking this is defining moment in parenting): Well, here's the thing... We are eating a chicken that somebody killed, cut off the head and feet, plucked out the feathers, and then we bought it at the store to eat.
silence for a few moments
Parker: Oh, ok.

And he resumes eating his butter chicken. I've said it before and I'll say it again. My kid is awesome.

I found some beautiful and delicious recipes this week. Enjoy!

Cook's Illustrated Blondies via Food52 I think I'm going to make these for a work potluck next week

Fresh Spinach Pasta via Smitten Kitchen Another recipe from My Paris Kitchen. I think I need to buy this cook stat.

Warm Baby Veg Salad with Goats Cheese Curd and Sherry Vinaigrette via Delicious Magazine How beautiful is this salad? The photo just makes me happy.

Peach Raspberry Granola Crumble via Annie's Eats This is interesting because you make granola, which I do all the time anyway, then cook the fruit and top with granola at the end.

Courgette Tart (Scarpaccia) from The Hairy Bikers Big Book of Baking via The Independent The pastry is kind of a pancake batter. Looks easy and delicious. Also, the name of this book is so fun, right?

Belgian Chocolate Truffle Cheesecake from The Hairy Bikers Big Book of Baking via Red Online What else needs to be said other than those four words?

Toad in the Hole from Fast, Fresh and Unbeliveably Delicious by Matt Preston via Taste Magazine
I've never eaten this classic British dish, but I'm putting it on the menu for this week with a salad- maybe the salad above! Tyler will be happy- his favorite food is Yorkshire Pudding, and this is basically yorkies baked with sausage. Serious comforting man-food.

Sriracha Round-Up

Yes, ok, Sriracha has become kind of trendy in the last couple of years. No matter. I love the stuff. Along with Frank's (yes, I basically put that s**t on everything), Tabasco, your Haitian Grandma's homemade hot pepper concoction, I love it all. The point is, food tastes better with a bit of a kick. Or a lot of kick, in the case of my favorite mouth-numbing, euphoria-inducing Nashville Style Hot Chicken Shak Sandwich. To quote the poet Ludacris, "Sweat for the lemonade, sweat for the tea. Sweat from the hot sauce, sweat from the... {CENSORED}". Indeed Ludacris. Indeed.

Here are some interesting recipes I've come across lately.

Sriracha Shrimp Skewers via Handle the Heat
Teriyaki Salmon with Sriracha Cream Sauce via Damn Delicious
Sriracha Fridge Pickles via Bon Appetit
Ultimate Sriracha Burger via Serious Eats
Sriracha Popcorn via Authentic Suburban Gourmet
Sriracha and Honey Cashews via Authentic Suburban Gourmet
Sriracha Devilled Eggs via ME! Four Seasons Kitchen

A Pinterest search for "Sriracha" also gives some yummy looking food porn... ahem... recipes.

Bookmarked and a "Recipe"

Jokes on me. It was 2 years ago that Tyler went on a wheat and dairy elimination diet. I complained. Quite a bit. Well, now it's my turn. To clear up my winter eczema, among a couple other more serious concerns I don't care share here, I saw our Naturopath on Friday who suggested I limit dairy and wheat consumption. Yay. Ironic that in my last post I professed my love of bread. I am going to take baby steps here. Dairy first, then maybe wheat (I am trying to limit it though). I feel dairy is more of a problem, but that may just be my subconscious convincing me of that as it is easier for me to forgo dairy. I think. We'll see. I found Spaghetti and Meatballs last night to be only slightly lacking without Parmesan cheese.

Funnily enough, I borrowed a Paleo cookbook from a woman at work earlier this week. I finished leafing through it as I was cooking dinner on Wednesday. And then I went and made a cheese quesedilla. Haha. Now that I am limiting dairy and wheat though, this book/blog will be a good resource for the next while. The recipes on Nom Nom Paleo look fantastic, actually. She uses a lot of bacon. Now that is a concept I can get behind.

I think for the next while though, I will be thinking of life Pre-Cheese and Bread Goodness and Post-Cheese and Bread Goodness. Bookmarks are divided up as such below.

The "recipe". Can a smushed avocado on toast be called a recipe? Not really, hence the quotation marks. More like a delicious suggestion. Inspired by Gwyneth Paltrow's avocado on toast from It's All Good (OMG I just realized I already own a dairy- and gluten-free cookbook!), I've added some tomatoes to make this a lunch. I don't know why I feel this is more lunchy. For breakfast I do the same without tomatoes.

SMUSHED AVOCADO ON TOAST
Serves 1
  • 1/3 avocado, peeled
  • red pepper flakes
  • 1/2 a tomato, chopped
  • basil, chopped
  • mayonnaise (or Miracle Whip in my case, I don't like real mayo)
  • toast
  • salt and pepper
Smush up avocado with red pepper flakes in a bowl. Stir in tomato and basil. Spread toast with a thin schmear of mayo. Top with avocado mixture and a sprinkle of salt and pepper. A fried egg on top wouldn't go amiss if you are really hungry. Oo and some bacon.

Pre-Cheese and Bread Goodness
Paprika and Cheese Crackers via Serious Eats
Honey Mustard Pork Tenderloin via Food52 This I can still eat. Yay!
Squash Brownies with Chocolate Swirl Topping via Foodland Ontario
Spinach Brownies via Blender Babes Parker told me this week that he doesn't like spinach in smoothies, only in brownies. Random... Ok kid. Have at 'er.

Post-Cheese and Bread Goodness
Fig Watermelon Salad with Honey-Vanilla Cashews via Nom Nom Paleo. Oh my this looks beautiful and delicious. I can't wait to eat this during the summer.
Caramelized Pear Oven Pancake via Williams Sonoma I made this recipe this morning using almond milk in place of milk. And apples instead of pears since that's what I had. Fantastic! Yes, butter contains some dairy, but let's not go crazy here. I'm allowing it.
Maple Quinoa Granola via Food 52 I think the quinoa will add extra yummy crunch. However, I'll have to find a new way to eat granola- usually I have it on yogurt.

Cindy Mushet's Italian Jam Shortbread Tart (Fregolotta) on Food52
Photo from Food 52

It's been a while since I've done a Bookmarked post, hasn't it? Here's a round up of what made me drool this week. Food-wise. I'm not including non-food items like a recent Pinterest search for "hot men" I conducted.

On second thought, I am going to include one link from that search. This may the weirdest and most strangely addictive blog ever. Just too good not to share. I present: Des Hommes et des Chats (Men and Cats). Side note: if you want to start a blog full of crazy apparently you go to Tumblr.

Salted Brown Sugar Toffee Cookies via Wit and Vinegar

Chorizo, Fontina, Artichoke, and Caramelized Onion Dip via Half Baked Harvest

Foolproof Pie Crust via Food 52 I used this pie crust for quiche this week and it was the best pie crust I've ever made. I baked the scraps left from trimming the dough for the pie plate and ate them with jam spread on top. And then went for a run.

Hasselback Potato Gratin via Serious Eats Crispy and creamy potatoes in the same dish? Yes please.

Chocolate Diablo Cookies via Chatelaine I've had these bookmarked for a while but made them this week to bring in to work for a holiday lunch. My team gobbled them up in about 2.5 seconds. There weren't quite enough to go around (I didn't get one, but I had some at home anyway), but rather than sharing the giant cookies my teammates starting claiming they had already licked them, rendering them unsharable. I guess they're pretty good.

Triple Ginger Snaps via Food 52 and Triple Gingerbread Cake via Serious Eats. Tis the season

Italian Shortbread Jam Tart via Food 52 I'm kind of addicted to Food 52 lately, clearly

Spiced Parsnip Cake again, via Food 52 Like carrot cake, but with parsnips. Intriguing.

Every where you go it has been BACK TO SCHOOL for the last couple of weeks, hasn't it? Parker won't be starting school until next year so I will have wait one more year for fun school shopping (although I may buy myself a cute lunch bag- hey, I take my lunch to work every day to avoid eating crap in the cafeteria, I think I need something cute to carry my lunch in finally).

If you have school-aged kids you'll have seen the crazy creativity that's going on in lunch boxes these days. Good thing I have a year to brush up on my (currently non-existent) skills of making a sandwich into an owl... or a bear... or a mourning dove, or something equally as ridiculous.

Back To School Lunch Tips via Boulder Lovacore These tips are doable. And I want the cute hard boiled egg molds for myself.

Apple, Bacon, Dubliner Cheese Stuffed French Toast via Neighbor Food Yum

Gingerbread Cake via Yummy Mummy Club As soon as fall sets in I am making this cake.

Curried Vegetable Lentil Soup via Fitness Magazine Again, once the temperature drops I am making a big batch of this to stick in the freezer for lunches. You'd think I was looking forward to summer being over or something (I emphatically am not!)

Bangers and Mash with Parmesan Polenta via All You Need is Cheese Have we talked about how much I love polenta? It must be in my blood, a quarter of which is Italian. Although that does beg the question why the Estonian part of me doesn't crave, say, smoked herring. Like, ever.

Homemade Merguez Sausage via Serious Eats Some girls ask for jewellery for Christmas, some ask for a day at the spa... I asked for a meat grinder. Bring on the homemade sausage.

Photo from Food52 Provisions
We are on vacation this week so there's not a lot of cooking happening this week at my house. We eat out a lot on vacation, even if it's a stay-cation (oh how I hate that term. I dislike it as much as "jeggings"- the word and what it stands for). Once I get back in the kitchen next week here's what's on my radar.

Pie Box via Food52 Provisions This isn't a recipe but isn't the cutest product ever? A handcrafted wooden box for transporting pies! C'mon. (I am also swooning over their blue Ball jars)

Fusilli with Fresh Tomato Sauce via Bon Appetit I am lamenting my lack of tomato garden this year. I think this is the first year since I've owned a house that I haven't grown tomatoes. Luckily I have the second best thing on my counter- tomatoes from the farm store the next town over.

Braised Eggplant with Garlic and Basil via Serious Eats I don't love eggplant, but it does a great job soaking up flavors. I'm hoping this tastes like my favorite Dim Sum dish of pan-fried eggplant stuffed with tofu with black bean sauce (great, now I'm really craving some Dim Sum).

Red Lentil Dip via Fresh Juice I'm thinking this would be like hummus. I plan on trying this recipe out this week actually.

No-Ice-Cream-Maker Brownie Chunk Ice Cream via Young, Broke & Hungry I have an ice cream maker, but this looks good and super easy regardless.

Sweet Tea via Food52 I've made iced tea many, many times before. In fact, when I was pregnant I drank an entire pitcher of Red Raspberry Leaf iced tea every day for a month (no, it didn't help with labour as far as I can tell, but it was delicious). I like having a ratio to follow though, usually I just dump in some sugar and hope for the best. I will also combine this method with a tip I saw on Pinterest to add baking soda to make your iced tea nice and clear rather than cloudy.

We had a whole lot of barbecued food this weekend. As it should be in the summer. Last night Tyler smoked a chicken (the smoker is the Father's Day gift that keeps on giving), and today we had a mess of ribs at Kitchener Ribfest. I just wish I didn't hate beer- part of Ribfest is a craft-beer-fest too and it looked so fun getting little glasses of different beers. I tried. I thought maybe a fruit beer would be good. I got a watermelon beer. It tasted like beer. Then I got a raspberry beer. It too tasted like beer. I was a trooper and gave it a good go, taking 3 sips of the raspberry beer before giving it away. Ah well, it was the ribs we were there for and I destroyed those mofos.

Here are some recipes that caught my eye this week.

Flourless Blender Muffins via Yummy Mummy There's a slim chance of me whipping these up before work- Tyler gets Parker to daycare so that I'm not late for work cause usually I'm late for everything- but still...

Breakfast Buttercups via Cook's Country America's Test Kitchen has done it again and perfected a seemingly simple recipe. These look great for a weekend breakfast.

Lemon Meringue Ice Cream via Sifting Focus I eat the filling out of the lemon meringue pie and leave the crust, so this is perfect. Must make before summer ends, but this will have to wait a few weeks as I currently have 3 other homemade ice creams in the freezer

Salt and Vinegar Roasted Chickpeas via Oh She Glows I love salt and vinegar. I love roasted chickpeas. I love making healthy snacks. Perfect.

Drink Mix Tape via Cooking with Julie Oh my I love this. Music paired with related cocktails. I was hoping to see Beastie Boys Brass Monkey, and there it was in the link through! Excellent.

One Pan Pasta via Lottie and Doof This is crazy genius! The pasta, pasta cooking water, sauce ingredients are all thrown in a pan together. What!? It makes sense- they always say to save the pasta cooking water cause it's starchy and holds the sauce together, right? I have to try this asap.

Sex Cereal Have you heard of this? At first glance it sounds like a joke, but you know what? The ingredients look delicious.

When it rains it pours, right? I didn't write any posts for over two months and now this is the third this week. Did I forget how much I love food? Yes, I think I suffered from some temporary insanity for those two uninspired months. But I'm back!

Speaking of food, this weekend is one of my favorite weekends of the year... it's Kitchener Multiculteral Festival weekend! Tons of food vendors representing countries from all over the world in one place. I can't wait to stuff my face with amazing food! El Savadorian pupsas are a must, samosas from a few vendors- just to compare and make sure we try the best ones, and hopefully they have the curry chickpeas that rocked my world last year again. So. Stoked.

101 Sandwiches via Cooking Light I love having a sandwich and a salad for dinner on the deck in the summer. The Grilled Zucchini Caprese Sandwiches are going to have to happen next week I think.

Sweet Potato and Leek Soup via My Invisible Crown This will have to wait for fall, but it looks delish.

Cavetelli with Asiago Oat Crumbs via Food52 Interesting

Waffled Chocolate Cakes with Cocoa Nibs via Waffleizer This is a whole blog about "waffleizing" things other than waffles. Awesome

Chicken Korma via Jamie Oliver Forums I have been craving Indian food since that Top Chef Canada episode with Vikram Vij (I just looked Googled this episode... that was a month ago. That is far too long to have a craving. This needs to happen next week too)

DIY Larabars via Donuts, Dresses, and Dirt These look great, healthy, and easy. Plus, I love the name of this blog!

I haven't done a bookmarked post for a while. Here's a few things I've come across in the last couple of weeks. Again, if you try out any of these recipes let me know in the comments how it turned out!

Spicy Sausage Cornbread Cobbler via Canadian Living I came across this while looking the for sesame snaps recipe. I may make this for dinner. Perfect for a chilly rainy day like today. Can you tell I'm on a diet? See food. Want food.

Sesame Snaps via Canadian Living I saw sesame snaps at the store today and now I really want some. I didn't buy any, of course. I'm actually in the process of making these as I write this. Craving? What craving?

Lime, Lemongrass, Ginger, and Coconut Cheesecake via Nutmegs, seven Wow this looks so good. Would have been perfect with my Thai feast had I come across this recipe a couple of months ago.

Grapefruit, Lime, Ginger Juice via Lottie and Doof I seem to really be digging this flavour profile lately. In anticipation of spring methinks.

Spiced Pear Cake with Browned Butter Fudge Dribble via Dinner with Julie You had me at browned butter. This is another "quick make it before spring!" recipe.

Homemade Mascarpone via Vegetarian Ventures I saw a tub of mascarpone on sale at the grocery store this weekend. For $10. Yikes. I've made ricotta at home a few times and it's easy (no, it really is!) and this is the same process only using cream instead of milk.

Skillet Mac and Cheese with Spinach and Bacon via Dinner with Julie This is on the menu for this week. Looks yummy.

Bacon and Brie Potato Skins via Cinnamon Spice & Everything Nice The brie with sweet potatoes is an interesting twist on potato skins.

I am getting tired of cooking gluten free. But it looks like this is going to be our reality for a while. I was almost ready to saw goodbye to baking- I know there are tons of flour alternatives but they can be hard to find and expensive, plus I don't think they taste great.

Then I turned on the TV (I have it set to automatically go to the Food Network of course) and Anna Olsen was doing an episode on flourless desserts. I think she has the right idea- rather than trying to replace all purpose flour with weird stuff, find alternatives that make sense- like Clafoutis made with almond flour. There is hope for baked goods in our house yet!

Raspberry Clafoutis from Bake with Anna Olsen
Flourless French Apple Tarts from Bake with Anna Olsen This recipe does call for rice flour and tapioca starch, but those are pretty easy to find.
Flourless Shortbread with Apple Pie Preserves from Bake with Anna Olsen The shortbread has cheddar cheese, with the apple preserves this looks so good.

And in other news, here are some other recipes I've come across lately.

BLT Cheddar Waffles from Canadian Family I have a way better waffle maker now. No more waffle fails.

Light, Crisp Waffles from Fine Cooking Clearly on a bit of a waffle kick this week (or as Parker says: "wapples")

Homemade Boullion from 101 Cookbooks I love the ease of Better Than Boullion, but I find it too salty. I like the idea of making it yourself. On a side note, when I started to type "better than boullion" into Google it finished my sentence to "better than sex cake" and many other "better than sex" desserts. Is this a thing? I guess so.

Bacon Stuffed Pork Chops from Canadian Living Pork stuffed with more pork? Yes please. Praise the Lard.

Malt Vinegar Glazed Chicken from Bon Appetit Another use for malt vinegar, which I love, other than on your fish and chips.

Cornmeal Crunch from 101 Cookbooks Basically baked polenta with caramelized onions. Yum.

Although I haven't been cooking anything fancy lately, I have been dreaming about cooking fancy meals (and cooking with dairy and gluten again), obviously. Hopefully I'll make all of these soon!

Eggplant, Mozzarella, and Saffron Bake from Bon Appetit I don't love eggplant except at Dim Sum, but this looks absolutely delicious

Crispy Cheddar Crackers from 30 Pounds of Apples via Foodbuzz These look super easy and I can use all my cute cookie cutters that have been boxed in the basement since we moved. Three years ago.

Slow Cooker BBQ Ribs from Oven Love via Foodbuzz This is why I love food blogs. I'd be really sceptical that these would be anything but mush if not for the write up from Oven Love

Great Gravy from Yummy Mummy Club I have a problem with making good gravy. i.e. I can't do it. Hopefully this recipe will fix that.

Roasted Provolone from Bon Appetit How good does this look? OMG

Coconut Granola from Megan's Cookin' It may be time for a new granola recipe. And this may be it

Strawberry and Lemon Cream Cheese Cupcakes from Chatelaine You might have to wait until spring, but you'll get made eventually little cupcakes. Don't you worry.

I like doing these Bookmarked posts because they are great to go back to when I'm looking for something new to make. Stuff gets lost in the quagmire of recipes I have in my favorites.

I have a few recipes photographed and ready to blog about, but for now here are some recipes I've bookmarked recently.

5 Veggie Burger from Today's Parent Hopefully these are dense enough to eat like a burger. Usually these type of recipes yield super soft patties that you have to eat with a spoon.

Rum Punch from Food and Wine For the parties I always plan in my head and then never have

Maple Chile Popcorn from Cooking Light This looks super yummy

Spicy Crab Cakes with Mango Puree from Food and Wine This is one of those recipes that looks delicious but in all honesty I will probably never make. I mean, who eats crab cakes at home on a regular basis?

Pizza Style Soft Pretzels from Yummy Mummy Club Yes, please

Open Faced Roasted Tomato Sandwiches with Goat Cheese and Parmesan Crisps from Bake Eat Repeat The photo makes me want to lick the screen. I think I'll make these for lunch next Saturday

Charred BLT Salad from Cooking Light I may have to subscribe to Cooking Light again.

Actually, most of these recipes I bookmarked today. I was on a bit of a Pinterest bender.

Triple Chocolate Cheesecake from Ruoka a la Sara This looks amazing but the site is in Estonian or something. Please, please let it be in Estonian- then my family can translate! Or I guess it can be Google translated?

Toffee Crunch Cupcake from Bakers Royale Caramel icing, chocolate cupcake, toffee bits. Holy moley. The chances of actually making this are slim, but you never know when the urge to pack a few pounds on your ass will strike.

Thai Coconut Curry Soup from Chef Michael Smith I want this right now. Curse you pantry for not housing any coconut milk right now!

New Orleans Barbecue Shrimp from Once Upon a Chef

100 Healthy Pasta Recipes from Cooking Light

Chocolate Lentil Brownies from Yummy Mummy Club Hopefully these turn out better than the black bean brownies. Cause those went straight in the garbage.

Pesto and Roasted Red Pepper Dip from Kraft Canada I forsee another dip night in our future

Cinnamon Roll Pie Crust from Taste for Adventure Oh yeah, that's what I'm talking about

I have 24 hours (I'm halfway in) to bake 7 zucchini bread, 3 banana bread, 3 pumpkin-cranberry loaves, and 4 multi-grain breads. Is this a baking marathon challenge? Am I having a party? No, this is an order for my fledgling side business, Baking By Amy. Ultimately, I want to work with food as a full time job, so this is attempt #1. I have other ideas if this doesn't work out (and unless I open a bakery I don't see how it would constitute a full time job, really).

Oh, and within that given 24 hours I work at my real job for 4 hours tonight. So forgive me for no real post today. Lucky for you, I've found some good recipes in my Internet travels this week. Enjoy!

Deals on Meals: 5 dinners for $100 from Bon Appetit This is our menu for this week. All the recipes look great.

Sweet Melissa Baking Book recipes from Tastespotting A roundup of recipes from this book from around the web with beautiful photos. I had this book checked out of the library a while ago and it was fantastic.

ABCs of Potty Training from Baby Centre Not food related, obviously, but Parker is 20 months old and it may be time to start thinking about potty training. This list of tips is one of the best I've found. Let me know if you have anything that worked for you!

Corn and Bacon Pie from Bon Appetit (Photo above) That just sounds like summer

Confetti Corn Muffins with Cream Cheese "Frosting" from Philadelphia Cream Cheese. Cute

Cinnamon, Sugar, and Coffee Roasted Chickpeas from Baking Serendipity I would have never thought to make these sweet, but they sound awesome

Petite Vanilla Scones from Pioneer Woman Like the ones at Starbucks!

Toasted Coconut Ice Cream from Amateur Gourmet There's a pineapple upside down cake recipe in there too, but I came for the ice cream

Lemon Poppyseed Cupcakes with Lemon Curd Filling and Blueberry Cream Cheese Frosting from Adventures in Baking Just look at this frosting! I am in awe of the beautiful purple frosting.

It has been a busy week of reading about food. Living vicariously much? Lots of inspiration here. I've actually already made one of the recipes, stay tuned for my next post, which at this rate will probably be tomorrow for I am a blogging machine this week, for how it turned out (I know, you are waiting with baited breath).

Back In the Day Bakery's Lavender Shortbread from Cityline Have you heard about this cookbook yet? It's all the rage. The cat's meow. Let's see if these cookies live up to expectation.

English Muffin Bread from Brown Eyed Baker English muffins in loaf form? Oh yes, this is happening this week.

Strawberries and Cream Angel Food Cake Roll from Brown Eyed Baker The virtuousness of angel food cake meets the sinfulness of whipped cream. Looks amazing.

Meta Given's Pumpkin Pie from Food52 Food52 has a Genius Recipes feature where they post recipes that are, well, genius in that there is something unexpected that makes the recipe the best. I read every one of them.

Just Chocolate Mousse from Food52 Chocolate mousse made with just water and chocolate. I generally give molecular gastronomy the stink-eye, but this is amazing. And more practical than say, smoke foam or grapefruit caviar.

Baking Sheet Macaroni and Cheese from Food52 Mac n' cheese with more crunchy cheese ratio. And no making a bechamel sauce. What's that? Yes, genius. This series is aptly named.

Sweet Braised Whole Scallions from Food52 Just one more from Food52. Scallions made the star. Intriguing.

Rye Crumble Bars from Orangette Finally I can use up the rye flour lurking mockingly (you know- as in "haha what the hell are you going to do with me other than make rye bread?")in the back of my cupboard.

I'm sorry this is another post without a recipe. I have been cooking, but I haven't made anything blog-worthy this week. Hopefully that is about to change with these recipes below. Stay tuned for a post on one of them (hopfully!).

Also, clearly I am enamoured with lentils this week. My family is going to be thrilled.

South Indian Lentil Cakes with Raita Bon Appetit
Mushroom and Lentil Pot Pies with Gouda Biscuit Topping Bon Appetit
Cornbread and Maple Pudding Anna Olsen
Cheddar Thumbprints Anna Olsen (These remind me of a cream cheese cookie filled with jam that my mom used to make. I tried her recipe and it failed miserably, so hopefully these work out better)
